Black-eye Pea Dip for New Years!

Eating black-eye peas on New Years seems to be a more Southern tradition. I have looked it up just out of plain curiosity, why we have this tradition! Is it superstitious? Is it because it's healthier than bringing in the new year with a bowl full of sugar? Although I can't remember finding an exact answer (this was many years ago because I was hoping the tradition was wrong and it was actually something more delicious), I do remember that it says the "tradition" dated back the Civil War days. Black-eye peas are hearty and had no problems holding up in winter temperature, they were cheap and readily available to everyone! With that being said, I wish strawberries or tomatoes made the top list of "readily available farm foods", but no here we sit bringing in 2013 with black-eye peas on our plate! It's said to bring luck to your New Year (I'm not superstitious, but why not?)! So, I'm going to share my yummy way to eat black-eye peas! It's simple, and I've made it for years! I can't remember where we came across the recipe! I've seen many variations since, but none of them make my taste buds do a little happy dance quite like this one! I've taken it to many parties and family gatherings and can honestly say, I have NEVER heard a complaint. I've actually had to "re-make" it in front of groups of people because we ran out, and then everyone wanted to know how to make it! So I had a, "make this incredibly simple dip" session in the middle of a get together and felt so silly because in about 5 minutes, I was done, all the while I felt like I should have done a cartwheel/back handspring to give a more "wow" effect! So let's get started so ya'll can hopefully enjoy this tomorrow (I've already grabbed a couple bites and then had to make myself stop or it would be GONE!)

Ingredients:
2 cans of plain black-eye peas (no extra flavorings...I've tried them and it just takes a wrong turn)
1 can of white hominy
1 can of petite diced tomatoes (again no extra flavorings)
3 green onions, chopped
1/2+ of red (you can use any color or combine colors) pepper, chopped
1/2 jalapeno, chopped (more or less depending on how spicy you like your dip)
1/2 bottle of Zesty Italian Dressing
A splash of red wine vinegar ("Splash" means I start to pour count to 1 and put the lid back on)
A couple shakes of salt (really one or two shakes from the salt shaker is all you need because your chips will probably be salted and then it becomes too much)






To start off you're going to open and drain all your "canned" items (peas, hominy, and tomatoes). Once they are drained, pour them into a large bowl. Next chop your green onions and peppers, then add those to the bowl! Now hold your breath and stand on one leg, and turn yourself around (not necessary but it makes me feel like I'm not giving you the EASIEST recipe ever lol)! Add the dressing, and splash of red wine vinegar along with the salt! Mix together and you're done!! It is BEST if chilled overnight, but you can pop it in the fridge covered for a couple hours and you're still good to go! Seriously, THAT EASY!! 
Here are some hints I've heard along the years:
Too Spicy: Easy fix, don't add jalapenos/remove the seeds of the jalapenos/use less jalapeno
Too "Runny": Easy fix: Use a slotted spoon so excess liquid drips off/use less dressing
Would garlic taste good: YES!! Add it if you so desire!
What about chopped onion?? Of course! I love onions, so the more the merrier!

Mongolian Venison (Or Beef)...You decide

So, I've been going a little blog reading crazy! My Pinterest boards have been feelings the effects of it as well! There are just SO many recipes that I want to try, I have no idea how I'll get them all done. I stumbled upon this little blog, Tracey's Culinary Adventures, and fell head over heels for her recipes! I quickly pinned as many recipes as possible, before her Mongolian Beef recipe popped off the page! She uses skirt steak, I used hind steaks (venison), you can take your pick! The smell alone, got DJ out of bed and ready for work without any snooze button!! (Just so you know, I didn't fix this for breakfast! When schedules are crazy you eat an early "dinner" a lot.) But, before we get started on this crazy awesome dinner, I want to introduce to you to my new niece and nephew!

Okay, I won't gush...even though I REALLY want to! I just wanted ya'll to see how much more fun and exciting our lives just got!! 
Now, let's get started on this recipe! Here are the ingredients you will need:

Ingredients
1 lb. skirt steak-thin sliced against the grain (I used venison hind steaks)
1/4 c cornstarch
1/2 c water
1/2 c soy sauce (low sodium)
1/4 c packed brown sugar
1/2 tsp. red pepper flakes
3 tsp canola oil--divided
1/2 tsp. grated ginger
1 TB garlic 
Scallions or green onion to top off (I didn't have either, used a white onion...tasted great)

To start off, you're going to want to take a paper towel and pat the steaks dry and then place them in a resealable bag. Add the cornstarch and give a good shake, shake, shake to move it all around! Once the pieces are coated, pour out onto a strainer and get rid of any excess cornstarch! In a small bowl, whisk together the water, soy sauce, brown sugar and red pepper flakes. Set aside for later!

Now take 1 1/2 teaspoon fulls of the oil and heat it in a pan over med/high heat. Add the ginger and garlic and saute for 15-30 seconds. Add the sauce to the pan and heat through another 2 minutes. Transfer this back to the bowl.

Turn your heat on high and measure out the remaining 1 1/2 teaspoons of oil. Add the beef (or venison) and cook until browned on all sides. Add the sauce back to the pan and turn down the heat. Allow to simmer until your sauce has it's desired consistency.

The Pioneer Woman's Prime Rib--Cope Style

Happy Holidays and Merry Christmas! I hope all of you are enjoying this time of year and not too stressed out or overwhelmed yet :) There are a lot of great memories attached to this time of year for many of us! Seeing friends we haven't seen in awhile, spending time with our families, and more often than not, gathering around in the kitchen sharing stories and laughs with those we love! The kitchen seems to be a gathering place for many households! I can remember many mornings spent in my Mema's kitchen watching her cook breakfast for the family, while the smell of bacon cooking, and biscuits in the oven would wake up and bring the rest of the household in to see what divine breakfast we were all about to eat! Over the holidays, as a little girl, my job was always to taste test her dressing! It was by far my favorite job I've ever had! She would get everything mixed together in a big bowl, add all the seasonings and then let me take a bite to see if I approved! I was always the one who could eat about 1/2 the pan of dressing, it was truly my favorite. With that being said, I guess she figured if I wasn't happy with the way it tasted, she would tweak it until she got it just perfect and then pop it in the oven and we would move on to fixing something else! Lot's of memories made it her kitchen for sure!

Some good friends of ours, The Copes, had a family get together at their house not too long ago! They worked hard to get their table ready and sit with their loved ones to talk and laugh and make a new memory for the holiday! Although we were not present, they sent me pictures of their time together and lots of delicious looking photos of how they prepared the Pioneer Woman's prime rib dinner! So let's get started on this dinner that I'm sure many of us will want to try after hearing about what a successful evening they had!

You can find the recipe on her website, or by clicking here. They told me they followed her directions, and it turned out great. So let's see what ingredients you're going to need:

Ingredients
1 whole rib-eye roast (should weigh in at about 14 pounds)
4 TB olive oil
1/2 c Kosher Salt
4 TB tri-colored peppercorns
3 sprigs of Rosemary
3 sprigs of Thyme
1/2 c minced garlic

Get your oven pre-heated to 500 degrees.

You will take your oil, and add to a pan and heat the oil on high heat! Cut the rib loin in half, then sear both sides of the loin until it has a golden brown color to it! You will want to make sure the heat is on high to make sure you get both sides seared!

Now take the peppercorns, and place them in a bag. Take a rolling pin and crush the peppercorns with the rolling pin! Take the leaves off the thyme and the rosemary and add  it with the salt and garlic to your crushed peppercorns! 


Then take your olive oil and pour over the roast and then pour on the rub mix! To get the mixture to stick to the roast you will lightly "pat" down on the roast! Sometimes if you try and "push" a rub onto meat you will find that it sticks more to your hands than what you want it to stick to!


Now with your oven set to 500 degrees, you set a timer for 20-30 minutes for the roast. Reduce your heat back down to 300 degrees and cook another 20-30 minutes or until the internal temperature of the meat is reading 125 degrees (this is medium/rare...but no worries...your roast will continue to cook once it's been removed from the oven!) Once you pull the roast from the oven, let it stand for 20 minutes to ensure that it continues cooking! If you like your roast a little more "cooked" then just leave it in for a little longer at first! But you don't want it to go over medium/rare for proper cooking!

Now all that's left to do is sit down at this beautiful table and enjoy
the good food, great company, and good laughs!

From word-of-mouth, this roast looked delicious and I've been told tasted even better than it looked! I have yet to find something from the Pioneer Woman that I don't like! She not only has great recipes, but her blog over all is fantastic! We also love her blog, because my sister home-schools (as does she) and she always has great tips and funny quips about her life!

Country Cooking-Spinach Cannelloni

After reading through my new cookbook some more, (Country Recipes), I decided to make spinach cannelloni. Her description of this recipe will make you feel like you're in Italy with her! She talks about friends and family sharing recipes and meals together, and how fresh everything was that they cooked with. Even though the recipe seemed long and tedious (just by looking at it), it was much easier than I expected! The only difference was that when we went to the grocery store, I thought I remembered someone (DJ) saying in the isle that spaghetti sauce was in the cart. I think I must have dreamed that, and didn't even enough supplies to make my own. However, we did have Alfredo sauce in the pantry, so I used that. You make your own white sauce in this recipe so ours was very creamy and delicious! I will probably make it again and use the red sauce just to see what the difference in the flavor is. So let's get started with the ingredients you will need for this:


Ingredients
3 TBS olive oil
2 cloves garlic, minced
1 medium onion, minced
2 cups cooked spinach, squeezed dry and chopped
1 TBS butter (I used about 1 1/2)
1 pound ground sirloin (we used venison)
2 TBS chopped fresh parsley (store was out, I used dried-and used only about half)
2 TBS chopped fresh oregano (store was out, I used dried-and used only about half)
1 TBS basil
1 large egg, beaten
2/3 cup grated Parmesan cheese
2 TBS light cream
1/4 tsp ground nutmeg
1/4 tsp salt
freshly ground pepper
12 cooked manicotti tubes (or pasta sheets--I used manicotti)
4-5 cups Italian Tomato Sauce (forgot this--we used Alfredo)

Besciamella (White Sauce)
4 TBS butter
4 TBS all-purpose flour
2 cups light cream or half-and-half
1/2 tsp salt
1/4 tsp ground nutmeg



First, I got my water boiling for the manicotti noodles. Then, in a large skillet, you're going to heat the oil and add the garlic and onion to the oil and saute. You are not wanting to brown the garlic and onion, just cook until they are translucent. Next you're going to add the spinach and cook about 5 minutes until the mixture becomes dry. Remove everything from the skillet, and place in a large bowl. In the same skillet, you are going to melt the butter and brown the meat.  Once the meat no longer pink, add the meat, oregano, egg, parsley, basil, cream, 1/3 cup of Parmesan, salt and pepper to taste, and the nutmeg to the bowl and mix well!
Don't forget about your manicotti! You're going to want to cook them al dente and make sure they are not "too done" because they will fall apart on you while you're trying to stuff them.

 Before the oven

Preheat your oven to 350 degrees and stuff each tube of manicotti with the meat mixture. Pour your red sauce (in our case white) on the bottom of the pan (just a thin layer). Next add the stuffed manicotti and then layer with the red sauce again, and then a layer of the Besciamella (white sauce), and then finish it off with Parmesan cheese! Pop it in the oven for about 40 minutes, or until the cheese and bubbly and brown! Serve and enjoy!

Lettuce Wraps-PF Chang style

I love those recipes that are so good, they are asked for again and again! Dee Jay just reminded me that we haven't had lettuce wraps in awhile, so I started on this extremely delicious dinner for us last night! A happy side note is that even though you are "wrapping lettuce" around a mixture of goodness after about four of them Dee Jay decided he was full and that they make a heavier meal than one would imagine! So ladies, get your guys to try them out. I'm going to go out on a limb that they will not be disappointed (or left hungry)! I found this recipe on this cute blog, Bohemian Transplant! If you have some time to look around her blog at all her recipes, you won't be disappointed! She also has great insights for parents, and photography as well! So let's get started with what all you're going to need for this recipe!

Ingredients
1 lb ground chicken
1/2 onion, minced
salt & pepper (to taste)
2 cloves of garlic, minced
1 inch fresh ginger, minced
1 TB sesame oil
2 1/2 TB soy sauce
1/2 TB water
1 TB peanut butter
1/2 TB honey
1 TB + 1 tsp rice vinegar
2 tsp (+) Chili garlic sauce (you can add sriracha if you want to add a kick)
3 green onions
1/4 cup peanuts, chopped

First, you're going to add the chicken and onion with a dash of salt and pepper and cook in a skillet until nearly done! Next, add the garlic and ginger and continue to cook until the chicken is no longer pink.

In a small sauce pan, heat the sesame oil, soy sauce, water, peanut butter, honey, rice vinegar, red chili sauce, and another dash of pepper. Stir until the sauce runs smooth and then add the sauce to the skillet and stir to combine everything.
After you have everything mixed, you can add the green onions and cook another couple of minutes and then sprinkle with the chopped peanuts.

When everything is mixed and warmed through, you are going to serve this in the middle of cold lettuce leaves! Wrap the sides of the lettuce around the mixture and enjoy! It's that easy!

Ronald Reagan's Hamburger Soup

I decided it was time for some hearty soup with the falling leaves, and colder nights! I'm so bad about cooking soups in the summer because it's one of those things that warms your bones and when it's 110 degrees outside, it's hard to get in the mood for that! So, I looked through Tasteful Traditions cookbook put together by Fellowship Bible Church here in Tulsa, and found this recipe which was submitted by Connie Athens.

It is delicious, it is hearty, and it is easy....so here we go!

The ingredients you will need for this are as follows:
2 lbs. ground beef (we used venison)
2 T butter
2 cloves chopped garlic
1/4 tsp pepper
1 (10 oz) can Hominy (I used white hominy)
1 c diced green peppers
12 c beef broth or water with bouillon cubes (I used 10 cups of water (because I ran out of room in my pot) and 10 bouillon cubes)
16 oz Chopped tomatoes, canned or fresh (I used petite diced)

The portions of this I omitted are:
1 1/2 c sliced carrots
2 c celery
Only because I couldn't wrap my brain around carrots, and celery on a hamburger. The hominy....well, I just love hominy! So it stayed!!

You are going to brown the beef in a 6 quart sauce pan (I used an over-sized skillet) in the 2 T butter.
Next you will add onions, garlic and green peppers-Cover and simmer for about 10 minutes. Next add your beef broth or water with bouillon cubes. Then add the chopped tomatoes (I drained mine first), and the pepper. Simmer the soup on low for 35 minutes and then add the hominy and bring the soup back to a boil for another 10 minutes. (I boiled it for 10 minutes and then I put it back on low/warm and covered it until Dee Jay got home about 30 mins later).


To top off our bowls we added a small handful of shredded Cheddar cheese (so I guess we actually had cheeseburger soup) and that really put it over the top on the greatness scale!


If you're looking for a quick meal, I had most of these ingredients in my pantry already! 
The only thing I would have to leave out was the hominy (::sigh::) but use what you have and get creative! We hope everyone is having a great week so far (it's almost over)!! Stay tuned!

Stew for those colder Fall nights

Well, I don't know about where you are, but here at home the nights are getting pretty chilly outside! It's so nice to finally have some crisp, cool air to make us forget about those sweltering summer days! We had some leftover stew meat in the freezer before all the new venison got added to the mix, so we decided to try out a new recipe I have in my new cookbook I got from a friend for my birthday! You can find the cookbook here! I must admit, I have already sat down and began to read this cookbook like a book! It is chalked full of great ideas for almost anything you want/need in your kitchen! So, thanks to Martha Storey (author) and her friends, we got to work on her venison stew! Again, if you don't have wild game meat on hand you can always substitute it for whichever stew meat tickles your fancy!

Here are the ingredients we decided to use:
1/2 c (+ 3 TBS) all-purpose flour
1 tsp salt
1/8 tsp freshly ground black pepper
2-3 lbs. venison coast (cut into 1 inch cubes) or ready to go stew meat
1/4 c vegetable oil
2 c boiling water
1 bay leaf
2 beef bouillon cubes
1/2 lg onion, diced (recipe calls for 12 small whole onions cut into chunks but we both prefer onions in our stew a little smaller) 
5-6 small carrots thin sliced, (recipe calls for 6 medium carrots, cut into chunks but I'm not a carrot person)
1/2 c of cold water
1 lg. green pepper diced (again it called for 2 large green peppers cut into rings...I don't like a lot of "chunky" vegetables in my stew)
3 small potatoes sliced into rounds, then quarter each round (we added this)
Note: We left out the frozen package of lima beans (again...not a fan)

Here's what you're going to do with all these fantastic ingredients:
1) Mix the 1/2 c flour with the salt and pepper. Take the meat and cover (dredge) the meat in the flour mixture. Make sure each piece is coated on all sides. Place the coated pieces aside on a plate.
2) We used a large skillet and added the 1/4 c of vegetable oil, then browned the meat on all sides.





3) Add the boiling water and bay leaf to the skillet with the meat. Cover it up and let it simmer for about 30 minutes!
4) Discard the bay leaf and add the bouillon cubes. (NOTE: We added 2 cubes to the water that we were boiling and then added one more cube after we put it all in the skillet.)
5) After it has simmered for half an hour add the onions and carrots (and potatoes if you so wish). 
6) Simmer for another 45 minutes or so. I think we left ours on there about an hour!
7) Serve in a bowl and ENJOY!

We left out a part of the original recipe where you remove the meat and vegetables and thicken the sauce with the left-over flour and cold water. We wanted more of "liquid soup" instead of something thick! It turned out just as hearty and we both loved it!

You'll see in the picture which I forgot to add that when we added the vegetables 
we added a can of fire roasted tomatoes to give it a kick. 
And seriously...I couldn't make stew without adding tomatoes :)

Jalapeno Dove Poppers from Deer Camp

So, I'm back!! It has been a crazy last month and a half with traveling, work and hunting season starting back up! We had the opportunity to get some vacation time with some great friends of ours at Grand Lake here in Oklahoma! The guys did a lot of hunting, although I did get to go sit in the blind with DJ for the first time this year!


Of course "deer camp" would not have been the same without all the wonderful food we cooked up and shared with the Copes! So the next couple of posts will be me sharing with you everything we got to eat! Let's all be real here...I LOVE to eat and I LOVE to be outdoors! This girl was HAPPY!! Also, in honor of the holiday we just had I want to say thank you to all the men and women who have sacrificed their lives and their time to serve this wonderful country. Sitting out in the woods surrounded by nature, peace and quiet, and the man who has my heart makes you suddenly very aware that we are lucky to get to have these experiences and live in a country like the good ole' US of A!

So, let's get started on these dove poppers!!

He started with 15 dove breasts (bones removed) and marinated them in a Ziplock bag in the fridge for 2-4 hours in Allegro game tame! (We love Allegro...although it is a bit salty so if you're cooking with it you may want to hold back on the salt until you do a taste test)!


Luckily Dee Jay's best friend, Eric was there with us to share a couple of his recipes with us! Truly, all I had to do was stand by with the camera and learn as he cooked! Ladies...can we say SPOILED???!!! He started by soaking some toothpicks in a glass of water like so..

Next, he took 8 jalapenos and cut them in half (length wise) and dug out the inside (core and seeds)!
NOTE: If you like your poppers a little more spicy, leave a couple seeds in there!

Now he took 8 pieces of regular bacon and cut them in half (to make a shorter piece of bacon not two long pieces)! He put one piece of dove breast into a halved jalapeno and wrapped that goodness in bacon. Skewer with the toothpick and place on a grill over medium heat until bacon is done and golden brown!

I almost forgot: I have to brag a little here about Dee Jay :) He harvested an 8-point buck with his bow over the weekend and got a doe! This is the nicest buck he's dropped since he started hunting! Eric's wife Tara owns her own photography business and you can find here at Full Feather Photography! She does really awesome work and is just getting started (that's how amazing she is)! Luckily we not only had a great guy cooking for us this weekend (who I might add harvested a really nice doe) but we also had an incredible photographer! Here is a shot she got of Dee Jay's buck! GREAT JOB GUYS!!! Can't wait to start cooking all this meat we now have in the freezer!!

Fall is for Pho and Trix are for Treats

So, one thing I love about cooler weather is the fact that I can make foods that warm our soul! There is a soup called, Pho that is seriously one of my favorite cooler weather delights! It's spicy, it smells wonderful all day while cooking, it's warm and delicious! You really can't beat that! Dee Jay's co-worker was telling him about some Pho he had the other day and came home all excited about it, so I looked up the recipe and remembered what I could from previous times of making it and got to work! The recipe that I went off can be found at steamykitchen.com. Now let's get to work!

Pho is a Vietnamese chicken noodle soup. You can also make it with beef, but for this recipe, I used chicken. To start out you are going to slice up a yellow onion into thin slices and get about an inch of ginger off the root. Turn on your broiler and put the onion and ginger on a cookie sheet and set under your broiler to cook. It took about 10-12 minutes total until the onion and ginger started to brown. You are going to want to check on it and turn over the pieces to make sure you cook evenly on both sides. Once your onion and ginger are finished, you are going to empty two containers (64 ounces total) of chicken stock into a big pot on the stove. Put the broth in a large pot on your stove and add one cinnamon stick and one package of chicken thighs (probably a pound or little more). Add the cut up, broiled ginger to the broth as well. Add about 2 tablespoons of sugar, and I used about one teaspoon of salt. Bring all this to boil and then lower the temperature to simmer the chicken for about 45 minutes or until it's cooked through. Now you are going to remove the chicken thighs from the stock and remove the skin and fat and bones. (We saved the skin for a crunchy surprise to top the soup with). Once you have the chicken meat pulled apart, you are going to put it in a separate bowl and add a little of the broth to keep it moist. Now you are going to strain the stock, and add sliced green onion (about 5-6), two tablespoons of fish sauce and your broiled onion slices. Bring all this back to a boil then simmer until ready to serve.

Now you are going to boil rice noodles as the package directs. It's going to take about 20 minutes total to cook the pasta, so while that's cooking let's get the garnish plate ready! You are going to take the rest of your onion slices that you haven't broiled and set out on a plate. Chop up some cilantro, serrano peppers, jalapenos, thai peppers, and add some bean sprouts to the plate. You are going to want to put out Sriracha hot sauce and Hoisin sauce to add to the bowl once you're ready to eat. By this time your noodles should be cooked, so go ahead and strain the water and rinse off the noodles with cold water! 
This is our garnish plate (minus the bean sprouts which I forgot to pick up at the store because Wal-Mart was out and I forgot to stop by the second store on the way home)
This is the broth simmering and waiting to be served!
Now you are going to prepare the soup to eat! Here is my ideal way to put this all together:
I add a good amount of noodles to cover a little less than half the bowl. I add the broth on top of the noodles until my bowl looks yummy and full! Then I add a little bit of each of the garnishments. (I know the Hoison sauce looks really "not appetizing" in the picture, but trust me that it is is soooo delicious)! Now all that is left for you to do is eat it ALL!!! I'm not kidding you, once you start on a bowl Pho, you are not going to want to stop! We're talking lick the bowl clean, fantastic!!
I warned you that the sauce does not make a pretty picture! 
But you're going to want it in there!! Trust me :)
 Now, onto a little dessert time! This recipe can be found on a fantastic blog titled Cravings of a Lunatic. This is so simple and extremely delicious. The only thing I would add to my description is to make this to eat right away (for parties, or work lunches etc). We let this set (covered) for a day or two and it went stale!! I was sad I only got two huge chunks of it before I had to start it over! All you are going to do it melt a bag of mini marshmallows and 1/4 cup of butter, and pour in about 10 cups of Trix cereal and stir. Put the mixture in a greased 9x13 pan and press down to fit the pan with a greased spoon (so it's doesn't stick), wait for it to set and then eat! It's that easy!!
So Delicious! And very colorful and fun for parties!

Pork Tenderloin and Chocolate Dipped Pretzels

I love that Fall is finally here! This means football parties (yummy dips and chili), and cooler weather (soups and hearty dishes)! I really needed to "rearrange" the freezer to see what all we had in there and came across my pork tenderloin which I had almost forgot about! So, I whipped up an easy pork tenderloin in the crock pot while I cleaned house and made a fun little dessert that I knew Dee Jay could take with him to work and snack on! Both were a hit and very easy! A caution to the "snackers" out there, I almost ate ALL the filling to the pretzel sandwiches which would have a disaster because they were ridiculously fantastic, so hurry and make the pretzel sandwiches so you won't be tempted! :) Now on to the good stuff....let's get cooking!

I found this recipe on allrecipes.com. It is very easy and so delicious so let's get started! You are going to start with 1 pork tenderloin (I had tenderloin "chops" so I used those). Put the pork in the bottom of your crock pot first. Then you are going to add one envelope of dry onion soup mix on top of the pork. Then add one cup of water, 3/4 cup of red wine, 3 TB minced garlic, and 3 TB of soy sauce. Mix this together and turn the pork to make sure both sides have been introduced to the sauce! Sprinkle in a little pepper and cover your crock pot and turn it on low for about four hours! See how easy that was? You can literally make this while running out of the house for errands, or pick up the kids from school, and come home to a delicious pork tenderloin for dinner!
NOTE: I had a few extra potatoes left that I needed to use before they went bad, so I sliced them in thin rounds and threw them in with pork! I would recommend this, you won't be sorry!





Now, on to the dessert! I am not a big fan when it comes to food in the sweet department, but I could have devoured the entire batch of these bad boys! For a little added bonus, these are just as easy (but more time consuming). I found this recipe on Two Tiny Kitchens which is a fun site with lots of great recipes! Now...let's get to making these! You are going to start by combining 1 cup of creamy peanut butter, 2 TB of softened butter, 1/2 cup powdered sugar (you might need a little extra), 3/4 cup of brown sugar (you might need a little extra). Mix all these ingredients in a bowl (this is where I almost lost the whole recipe due to my lack of not being able to stop eating this sugar packed yuminess)! Now grab a bag of mini pretzels and spoon about 1/2-1 tsp of the mix inside the pretzels and squish together to make a sandwich. I rolled the peanut butter mix into a small ball and it made it much easier and the perfect "sandwich" was formed! Now put these on a pan and let them sit in your freezer for about 30 minutes. Next you are going to need some Baker's dipping chocolate!
Pop this in the microwave and follow the directions on the package to melt the chocolate! Now you're going to dip the pretzel sandwich into the chocolate and place them back on the cookie sheet and stick them back in the freezer until you are ready to serve! Something we noticed is that they will melt (not so much the chocolate but just overall) pretty quickly, so try to keep them on a chilled plate when serving or you could have very messy hands and fingers when it's all over!
Both of these recipes turned out wonderful, and the pretzel dessert was a hit with the guys Dee Jay works with! I sent him to work with an extra bag of them just so I wouldn't be tempted to eat the whole tray before he got home!
