Tomato & Cheese Tortellini Soup

Last night we picked a fantastic recipe to try out! A creamy, hearty, soul-warming tomato soup! I found the recipe on RecipeSwagger.com (she adapted the recipe from TastyKitchen.com!) Have you ever taken a bite of something (or a sip of something lol) and just wanted to stand up and move and groove to the "makes my mouth happy" beat?! Well, this soup did it for me! It was ridiculously easy to make and thankfully took almost no time at all to put together! My only issue is we only have one bowl leftover, so it looks like the boxing gloves will go on today and we will have a battle for the left-overs (I'm only kidding...He's at work right now, so I have time to enjoy the last bowl before he even knows what happened)! ;) So let's get started!!

Ingredients
2 lg garlic cloves, minced
2 TB olive oil
2 (10 3/4 oz) cans of Condensed Tomato Soup
1/4 c Sun dried tomatoes
2 c half and half
2 c chicken stock
1 tsp onion powder
1 TB Italian Seasoning
1/2 tsp salt
1/2 tsp pepper
1 pkg. cheese tortellini
1/2 c Shredded Parmesan cheese (for topping)

To start off, finely mince your garlic cloves! Then add the olive oil to a med/large pot and heat oil over medium/high heat. Add the minced garlic to the pot, and saute until the garlic is golden brown!



Once the garlic is a golden brown, go ahead and add in the tomato soup, chicken stock, half and half, sun-dried tomatoes, onion powder, Italian seasoning, salt and pepper! Once you have the soup simmering, add in the cheese tortellini and cook according to directions on the package! (I cooked ours a little longer than the two minutes the package directed to cook, and turned the heat down to low/medium). Once the soup is finished, scoop into a bowl and top off with the shredded Parmesan cheese and enjoy!
